Nowadays, most skilled builders and designers are so aware of thermal bridges that it's probably not the problem. The same goes for the amount of insulation.

I think it's just that the air doesn't circulate as easily in the corners. This creates colder areas not exposed to convection.

This won't be a problem at all once all the material dries completely and you have adjusted the ventilation. I would avoid dressing the walls until the condensation stops, and if you want to continue working now, it goes much faster if you use a dehumidifier.
I'm a little concerned about the thermal bridge...
My grid (28x70) first goes against the ceiling joints just under where the installation layer rule 45x45 comes, i.e., it is about 17mm on the ceiling joint. This is also a thermal bridge? But maybe it's not something that affects/is taken into account?
