I'm in the process of installing sparse spacing in the ceiling of the garage. In the middle, I have an IPE beam and I'm a bit unsure about how to cover it with plasterboard. How is it usually done, is there anyone who can guide me through the procedure or where I can find more information on it?

I have an idea that you can drill holes in it to screw a piece of wood on each side. Then I get stuck on the flange being 50 mm...

Grateful for a bit of help so I can make progress on my construction...
 
Use ones like these. Available in different variants depending on the manufacturer.
Just snap on and secure the gypsum board.

If you can also access the top side of the beam, I would probably make frames with sparse around the beam. I would first make a U with 3 sparse pieces and hang around the beam before screwing on the last sparse piece. Then I would cover everything with plasterboard. This will, of course, make the beam a bit thicker, but you can probably live with that.
 
Use a bolt gun, it's fine to fasten a 22mm board both in the beam life and underneath, then screw the plasterboard into the wood. Last time, I had yellow shots in a Spit bolt gun, the beam was an IPE270, which means quite thick material, it pierced through without issue./MLj
 
Isn't it possible to just drill and screw the studs in place?
