I'm redoing the floor in the living room and had a thought regarding the stove replacement. As it stands now, there is a height difference with tile that I plan to chip down and level to lay new tile. My question is, how do I level it best? Is it possible to try to chip it fairly evenly to the right height directly, apply adhesive and put the tile in place, or do I need to go down a bit extra and level it with leveling compound/concrete?

Welcome to the forum! It can be difficult to chisel a flat surface, but on the other hand, adhesive can absorb quite a few uneven spots. You might be able to use adhesive to even out the surface before laying tiles. Or if you want to buy leveling compound, that works too. Don't forget to prime the surface after chiseling, regardless of the method you choose.
