Torn between the following:

1) Backer rod and joint.
2) Trim strips in wood painted in the same color as the door.
3) Trim strips in metal painted in the same color as the door.
4) Plaster.

What do you think will be best? Grateful for help!

No. 3 is probably most sustainable in the long run.

No. 2 will be the cheapest and easiest to execute in the same color as the door, but sure, metal might be the most durable, but the door is made of wood...

Also considered using moldings of oak, for example, and skipping the painting...
 
Finish with a sticky joint that you then blow/throw fine sand on so it resembles plaster joint 😀
