As seen in the picture, our gillestuga is enclosed by two walls towards each neighbor, one goes inward into the house towards the laundry room, and the fourth towards the ground/outdoor.

There are currently wooden studs in the gillestuga on the walls and my question is whether I need to tear them out on all walls, or just the one facing outward towards the ground?

Impossible to answer without further investigation. Sure, the outer wall against the ground is most exposed, but if, for example, it is an uninsulated slab with poorly draining/capillary-breaking material underneath, moisture can very well find its way up through the slab and up a bit into the inner walls.
