Yes, I got started a little late and the time was consumed by other problems that arose, so there wasn't enough time to lay the decking on the patio, and now the wood has swollen to the point that it seems unwise to continue laying it this year; the gaps will be gigantic when it dries. So now I'm wondering if it works to store the decking wood in the shed and wrap a bunch of straps around it to maintain its shape, then continue in the spring?

Decking is a perishable item, it should be delivered wet and it should be laid wet. And you're thinking wrong about the gaps; if the wood can get this wet now, it will get equally wet and swell just as much when it's installed, and if there's no allowance for movement then, the screws will pop. You can lay it now if you want, but do it with minimal gaps.
