I was thinking of taking a board, maybe MDF, and using it as a ping pong table on one side, and then flipping it over to have a race track on the other side, with the race track screwed in. And when it's not in use, you can just stand the board up against a wall. What kind of board is best for this? It shouldn't warp, and it has to be fairly large, and preferably not too heavy... the weight isn't super important, but
 
I would suggest a flap disc, but all discs can warp if you lean them against a wall.

I would bet on a torsion box. Google it. It can be built with relatively lightweight materials. Paint it and you have a torsionally rigid construction that doesn't warp easily. The weight might be an issue despite lightweight materials, but I would go for it anyway.
 
Light + dimensionally stable, then the best would probably be some form of sandwich, e.g., 3 mm plywood glued on each side of a light core material, like XPS or divinycell.
 
If you're going to use it as a ping pong table, it might be good to consider how the ball will bounce on different materials. I have no idea which would be best, but it just occurred to me that it might be good to think about it... :D

Spontaneously, it feels like mdf might respond better than, for example, plywood, but it's just something I imagine...
 
Serious ping pong tables are quite heavy/massive/stiff/smooth precisely for the ball's behavior...

I also do not believe in building a ping pong table out of any light material.
 
A ping pong table maybe? And possibly glue a board for the car track underneath?

Regarding the board, it's probably not so easy due to its size. A proper ping pong table should be 274 x 152.5 cm.
Where do you find such large boards?

Seems to be the most reasonable suggestion so far.

Otherwise: A "regular" ping pong table, which can be folded "to a vertical position" (or left standing with the net removed) and the slot car track on a board that can be hoisted up to the ceiling to get it out of the way.
