I will fasten a building board that will be a few centimeters from the fridge/freezer. Therefore, I want to use a material that "withstands" cold and can also provide some insulation against potential moisture on the wall.

I was thinking of using 12mm chipboard.
Anyone have any objections to that? ::)

Sounds like you need to replace the fridge/freezer if you need to consider this in the choice of materials around the unit. We have standard kitchen furnishings and next to the fridge/freezer is a veneered particle board.

and since when did it become cold behind a freezer?? Or am I misunderstanding something here...

It usually gets warm.. if I remember correctly..

Yes, I usually have it warm and dry there.......the exact opposite of cold and humid ???

Yes, it should be cold in the freezer... Now we're being sarcastic... we'll stop that... right away... :-) but it was a bit fun anyway... and you'll get that back at some point...
