What to use instead of plastic in the ceiling?

Hello!
I'm insulating a garage that will mostly remain cold but will be heated occasionally, and I've therefore decided not to use plastic on the walls and ceiling. What I wonder is if anyone has a tip on what I can use for the ceiling instead? I want something that can hold the insulation above the rafters. Or can I use plastic on the ceiling even though I don't have it on the walls?
In the walls, I've used wind barrier instead of plastic, and then there's OSB+drywall on top of that, so the walls will probably be quite tight anyway. The problem with the wind barrier is that it easily tears, so I'd like a slightly more stretchable material for the ceiling.

Yes, either ceiling gypsum board or some wood paneling on the ceiling. However, I don't want to place the insulation directly against the ceiling covering.

torparkalle: Have you been driving like that for a long time? How is your building heated?
It feels like my solution will be very similar to yours if I plasticize the roof.

Have recently erected the walls, has three rooms. The garage section gets 10, the hobby section 20, and the pump room 5 degrees! Will heat waterborne but electric initially! Have read many threads about plastic here and there, ended up with no plastic in the wall!
