What is suitable to have on the wall in a cold garage?

I have a cold garage (barn) where I am setting up a workshop.
Right now I have OSB boards on the walls, but what is most suitable to add for fire protection? (able to use grinder/sander and possibly welding)

Indoor drywall is not good due to moisture.
