Yes, that sounds wise. The actual thickness over the corner metal must be fairly thin.
 
The corners for gypsum plaster can be plastered over excellently and it should be done according to the manufacturers. I believe you lay over 2-4 mm and, of course, it becomes durable. It's the most common method of plastering in countries like Germany.

It seems likely that it would have been less unsightly with a different corner profile, but you probably still see the profile since it lacks the surface texture of the plaster? Do you happen to have a close-up of how it looks?
 
Here's one of my plastered corners that has plaster corners (in metal of course):

It looks a bit "thick" but I think it's something with the flash/shadow that's causing trouble. The corner itself is quite smooth and good I think...

I will get the same visible corner profile, unfortunately. But it will surely be strong.
