Planning to get 2 of these

But they have a lot of holes around. Really handy sometimes, but not so great if you want them next to the bed or even as a coffee table. All small items will fall through.

I can think of a lot of smart solutions to fix this. Cutting a panel would be the nicest. But honestly, I am having surgery on the 23rd and not feeling well, so I need to make it as easy as possible.

Can you come up with something I can lay down, staple, glue on, and can cut to fit, or use an easy saw? Like a plastic placemat.

Fill in the holes? ;) You might be able to buy acrylic sheets (Biltema has reasonably priced ones in various sizes) and saw them with a narrow saw, they are easy to handle and just need sanding smooth in the corners afterwards.
 
You might be able to buy 2 glass panels from the glazier and place them on top of the nightstands.
It should be an easy task for the glazier to cut the glass to the right measurements for you. :)
