I'm working in the basement and have finished plastering the walls, but I've run into a problem when I want to cover the gaps between the ceiling joists.

I've plastered the ceiling between the joists and made a box along the wall that protrudes, but I would appreciate tips on how to handle the "gaps" between the ceiling joists vertically. The house is old, and none of the joists are straight, is it just a matter of measure, measure, and measure?

Yes, you need to measure each one individually, but then you don't have to be precise to the millimeter. You can use plaster if there are some gaps between the plasterboard and the beams, which makes it a bit easier.
