I want to build a 5x3 conservatory, and I have sliding door panels that are 5 meters.
Do I have to divide the panel to place a post in between, or can I build it with just 2 posts?
That way, the distance between the posts would be 5 meters?

It completely depends on how you plan to construct the framework and what kind of roof you intend to put on. There are glulam beams that can span over 10 meters. But most likely, the answer is yes, you will need a post in the middle if standard joists are used in the framework.
With sliding doors, it's especially important that the beam above bends as little as possible, otherwise the doors will soon pinch together from the pressure above and will no longer be able to slide. (I know from experience, as my conservatory was built by the previous owner who laid a "foundation" of old sleepers directly on the soil, which has now started to rot and cause the entire floor to slowly sink, pulling the framework with it. I can currently open 1½ of six sections in the sliding panel).
