I'm renovating the kitchen.

Initially, I thought about putting wall tiles on the wall. But I suspected there might be brick underneath, so I started to chip away a bit and found what looks like brick.

Could it look nice to remove the plaster and use what's behind it?

Or is it better to fill it in and put on wall tiles?

It can look really nice.
Clean thoroughly, fill in any damaged joints.
Treat it with klinkersolja to get a slightly better sheen.
I believe that klinkersolja works well on brick.
 
Authentic things are usually more attractive than imitation.

I would definitely first try to expose the old brick.
I haven't done anything like this myself, but I once saw it done. They hadn't removed 100% of the plaster. Various light traces in both the bricks and the mortar could be seen and I thought it looked nicer that way, like a more vibrant surface.
Depends on what you're looking for, though... ;)
My advice, experiment.
 
I absolutely think you should try to uncover the brick, because it can look amazing! My best tip is to start by preparing a small section, like 5-10 bricks, and see if it turns out as nice as you imagined with oil and everything. If you're satisfied with the result, you can tackle the rest of the wall.

I have two acquaintances who have torn down the plaster in their HSB apartments. And they become very stylish feature walls as hallway walls that shine thanks to the varnish. The varnish is not just for appearance's sake but also very much to avoid dust, as brick dusts endlessly. Problems you may encounter include, for example, blue concrete in certain areas; that's what they've done in our HSB apartments, only brick on load-bearing walls and blue concrete for the rest of the walls...
