What is this type of bolt called?

"bladskruv" but I have never seen one that large, have used them to hang pipes from the ceiling.

Thought it looked interesting. Bending metal is always useful.

You can do the same thing with two flat bars.. The only difference is that you have to drill the holes before threading them...

Yep! Another difference is that these bolts have round shafts. But you could make some kind of handle for the flat bars.
