We have a company that is straightening the barn roof for us, tar paper and battens have been laid vertically. But then they also lay "regular" battens which the sheet metal is supposed to be screwed into? With blocks underneath...Will it really hold?

That's how you usually direct roofs; whether it will work or not depends on whether they have done it sensibly so everything is secured.
