I'm going to renovate our stairs and I'm wondering which of these I should use? Which is the most durable and cost-effective. How difficult is it to install?

I have personally renovated with option 1.
I'm personally satisfied with the result and it was very easy to install, largely thanks to that gadget included for measuring the steps.
The only downside I experienced was that the material felt a bit prone to cracking during sawing, but I managed to avoid issues as it cracked outside of what became the new steps.
Despite this, I believe I can recommend option 1.

I used stepkits stair compass that could be purchased separately. Then I bought regular laminate flooring, which I glued on the stair steps. Worked great!

3. Since I have small children, I'm wondering if the laminate staircase and step kit were "slippery"?

The cost for our stairs wasn't much.
"Stair compass" for about 350 Kr.
Mounting adhesive about 130 Kr.
Laminate flooring, bought Hornbach's "cheap" flooring, about 40 Kr/square meter, I don't remember how much I bought, but I had to combine 2 "boards" for each step. I have 11 steps, thus 11*2=22 pieces.
The stair noses, I don't remember what they cost. But I chose a nose with a grooved and wide top side so that you don't slip.
And, if the floor is slippery, NO, we don't think so, and we also have kids, and they haven't slipped.
In total, the whole setup cost about 1500-2000 kr. (approx)

Stepkit naturally becomes more expensive, though I don't have an exact figure for every krona, but in total for 12 steps, it was between 5,000 - 6,000 SEK.
Since it's oiled oak, it's not slippery at all. We have chosen to lacquer ours to protect the stairs a bit more, yet we do not feel that the stairs have become slippery.
