Hello,

We are going to install a new shelf in the kitchen that will be 40cm deep and 68cm wide. What size bracket should we aim for? Nice brackets in oak (like the shelf) seem to only go up to about 25cm, which feels a bit small.

What we plan to have on the shelf will weigh about 10kg, but we have two cats that will probably decide to jump up there, so we should probably account for significantly more.
 
The wider the brackets - the more stable.
Should it be mounted on rails on the wall or?

No, no rails, just two regular brackets.

Yes, 28cm, but then you have a 1-2cm molding behind the shelf so the bracket itself is still only 26-27cm.
 
It is the limitations in load and demand that govern the supply. For heavier loads, metal constructions that can handle more weight are chosen.
Clas Ohlson had one in pine that is 340x415. Maybe it can be stained to oak?

It is possible.

I found these now, and one could use the long side under the shelf and then the short along the wall, but the question is how to screw the short one since it only seems to have one screw hole?

A new hole is being drilled...
Unfortunately, the console is probably not designed for "reverse" mounting, so there is a risk that it might break under load. It also requires a good opportunity for fastening to the wall.
