Currently laying the sub-floor. There are some gaps where the drain pipes come up as the conditions for laying the sub-floor aren't perfect, with uneven beams, etc. The gaps are up to about 1.5-2cm. Is there a good foam sealant to seal these with before laying insulation, that can keep out drafts and mice?

If the pipe is centered on a plate, no mice will come in, and they usually don't enter that way. Instead, they get into walls and joists through small holes from the outside. A good place to enter is if there is cladding. Sealing to prevent drafts is not wrong, it can be done with regular foam sealant. If you have more places, you can use it there. Keep in mind that it expands rapidly, you don't need much for 2 cm.
 
Then you have to be a little careful, you don't want to crush the drainpipes. Regular foam sealant then?

The foam does not crush any pipes, however, it can expand quite well so if you are inexperienced, apply a little at a time around the pipe on the upper side of the blind bottom. The pipe will be fixed to the blind bottom after foaming. You can buy tubes at larger stores, and since it's not for gluing, the cheapest option will suffice.
