I am going to cast posts on rock and want to anchor the post form into the rock. I was thinking of using some simple angle iron and screwing/attaching it to the rock.

What is the screw, spike nail?, that I'm looking for called and how do you do it?

Isn't it easier to pour a small batch at the bottom of the mold first so you don't have to drill and hassle with iron etc.?

Sure, it might be easier? But isn't there a risk that there will be a "fracture" where you continue with the casting later?
I've never done this before but thought it would be nice to get everything level and then fix the mold against the rock.
 
Just need to reinforce and then pour a base that holds it in place. No problem with any cracking.

Alternatively, you can foam the form against the rock; then it will be stuck tight as hell.

No, you don't need to worry about that. You also have reinforcement drilled into the rock, right?

Relief! Yes, 3 pieces of 16mm iron per footing. The footings are 200x200 with a point. I also got a bit worried that I drilled the holes too close and centered. I'll probably have ample coverage for certain corners. Will it work, or should I add an extra hole, do you think?
 
Wooden box frame on a concrete surface with holes at the bottom, possibly for a construction project or concrete pouring.
 
That will surely be good, the rebar should not be too close to the surface of the concrete either. There's a risk it will be exposed to moisture and start to rust, resulting in cracked concrete.
