How do you make the transition look nice?
I know I should have extended the ceiling plasterboard to the wall but it didn't happen that way ...

I don't quite understand what you mean, unfortunately. You need to spread the filler from the corner about 15 cm in both directions, and then it won't be a problem.

The seams in the plasterboard shouldn't be filled, so it will leave a flat edge that will look odd. I would have added moulding.

Yes, exactly, that's my dilemma.
I talked to a builder. He said they sometimes putty a smooth surface a little bit in. That's what I'll do. If it doesn't look good, I'll install a trim.

Trim or not is a matter of taste, but external corners are present in every new construction and putty is used there.
Trim can also be placed on walls with external corners to protect against damage.
If you find it difficult/tricky to use putty, using trim is easier.
