I have a chimney that is also conically built.
It has developed "detachment" between the brick and plaster, no large cracks yet but you can hear that large parts of the plaster have detached when you knock on it.
How much should I knock off and what type of mortar should I use when I replaster it?
It is metal-clad at the crown and base.

Everything that is loose should be removed, especially if you hear that it has come loose underneath.
I would ask a well-stocked stove store. The ones we have sell some of that (and perform glide casting, etc.). I have a feeling that some special plaster will be required since it is both exposed to moisture and the bricks change temperature (move?) when you fire it. I don't think plaster B holds very long.

I have used cement mixed with sand on a chimney and it is still fresh after 15 years later I used plaster, kc, on another chimney and it has adhered for about 12 years without peeling or cracks.
