I'm considering changing the paneling on the guest cottage during Christmas. Normally, I paint a coat before installing the batten to prevent the wood from showing when it shrinks over time.

If I were to put everything up in the winter, there would be no painting until spring. Is this a smart move, I wonder? It doesn't feel great to install the paneling without the batten... but maybe it would be okay too.

It will probably get through the winter without paint and trim laths (the air is usually dry in winter), but if you have the opportunity to pre-paint the panel indoors (in the basement, heated garage, or something similar), it certainly won't hurt.

The air is most humid during winter (in relative terms, which is what is usually measured). Especially in West Götaland when conditions have been as they have recently.

I don't think the wood will be damaged. However, there is a significant risk that you will get surface mold on the panel. This can probably be scrubbed off before painting; you should also use some mold-killing agent before painting.

I would have waited with the panel replacement or alternatively painted the panel before putting it up, indoors. That's what I'm doing right now.
 
If you have the option to buy primed paneling, do it!
It's available for all commonly found panel types, at least in well-stocked lumberyards.
This way, the wood is protected until summer when you apply the final coats twice.

In early summer, it's the driest, as Vectrex writes.
If you paint then, there will be no gaps, so you can put up the cover strip now even if it's only primed.
 
Don't you have any indoor work to do this winter instead?
Nailing paneling is a perfect Easter job ;)
