Hello,

I have torn down a structure in the ceiling that was both screwed and glued, which of course resulted in a lot of drywall coming down...

The holes are quite large (about 20cm) but don't go all the way through.
Damaged ceiling drywall with large holes and torn plaster after removal of a fixture, showing irregular and uneven surface.
What is the best way to fix this? Fill with joint tape, or are there other ways that don't involve putting up new panels?

Gypsum spackle is your friend! It's like the best thing since sliced bread!

Trying it! Do I need to use tape as well or can I go without it?

I've done similar repairs without a strip. Just make sure to knock away the loose parts.

I would have removed loose pieces. Painted with random wall/ceiling paint and then filled with standard wall filler. It will require several layers so it is not a suitable method if done by a professional.
 
Gypsum filler that you mix yourself from powder is better. It doesn't sink like regular filler does and you can build up thickness right away.
