I find that my joint compounds crack regardless of whether I use paper or mesh. I'm wondering if I'm applying too thin a layer? How thick layers do you need to apply over tape on joints on regular indoor drywall?

Until it is smooth with the drywall, it shouldn't require much.
Have you read an installation guide for drywall? It's not quite as straightforward as one might think, and any mistakes here can also lead to cracks even if the "painter" does it right.

But for example, an outer corner with cut tiles, the corner strip surely adds about 2 mm, and then there should be filler over the strip. You don't maintain that thickness over the entire wall gypsum, so surely a filled wall becomes wavy over the entire length?

The thickness of the filler doesn't significantly affect the risk of cracks. I guess the plasterboard walls are in a wooden house.

Correct, wooden house. But the craftsmen's joints don't crack, only mine...
