We have an old barn with plastered stone walls about 5x5 m.
This section of the barn has an old, half-rotten ceiling that we want to remove. On the outer walls rests a "new" (70s) metal roof on free-standing roof trusses. On these newer trusses, we want to mount a new under-roof about 0.5 meters higher up than the old rotten one.
Now to our question: Several of the old rafters built into the stone wall are rotten; what happens to the stability of the stone barn if we remove them? The new roof construction stands on top of the stone walls without visible attachment.
Will the stone walls fall out/in if we remove the old rafters?

Probably need a bit more info about the building, but in principle, the old ceiling beams shouldn't have anything to do with the stability of the stone walls.
Old walls tend to be quite thick (=stable, even laterally). It can depend a bit on the material the wall is built from. But if the wall is intact and sound and not noticeably leaning, it should be fine.
The newer roof should be anchored to the frame, otherwise, there's a risk it will blow off in the first good storm. Newer trusses and metal roofs are indeed flimsy and light roofs that work well as sails.
