Remove insulation that is flush against the "slab"

Hello.

I have a question about my floor construction in the house. (1-story with slab)
It looks like this.

Slab on ground, floor joists with insulation in between directly against the slab.

I am replacing flooring in the kitchen with leveling floor due to a water leak and I am wondering about one thing.
Now I have access to remove a lot of the insulation that is directly against the slab in the rooms next to the kitchen.

Is this something that might be a good idea?

So, it would result in an uninsulated floor in certain areas of the house. I have also thought about ventilating the floor in the house with an exhaust fan.

But the main question is...

Could it be worth removing as much of the insulation as possible that I have access to?
What could happen besides the floors getting colder?

Faced the same thing a while ago.
I removed and cleaned as best I could and also took the opportunity to insert a ventilation pipe under the threshold to hopefully create negative pressure in the adjacent rooms.
Believe it or not, but when I installed the air supply vents and tested with smoke, the smoke disappeared under the floor.
My tip is to do the same, I don't think it will hurt at least.
