We have an old stove we want to get rid of and in relation to that, we also need to dismantle the chimney (at least on the inside) so that one of the children can use the room.

The inner ceiling follows the outer roof and therefore there is no attic.
How is the chimney constructed?
I tried loosening the 4 bolts on the top of the stove and wiggling a bit, but then the whole chimney on the outside swayed.
The house is from '72. It's unclear when the stove is from.

Cut a larger hole inside the ceiling to create a workspace to work on. Approximately 60x60 cm, be careful with the plastic. Remove the insulation and loosen all the bolts. Go up on the roof and just pull it straight up. Then just fix the rest! Remember fall protection! A summer vacation in the ER is no fun!
The chimney is probably easy to build up, and conversely to take down.
Start from the top.
Check the house papers, you might have information lying in a drawer somewhere.
With that roof slope, I would have brought out my scaffolding for that job, it's not just the chimney that needs to be removed, the roof needs fixing afterward.
