I have removed lime plaster from a chimney breast, but on about a 1x1 meter area, there was some form of cement mortar. In the joints, it's easy to make progress, but it sticks firmly to the bricks. Is there any convenient way to remove the cement residues without damaging the chimney breast?

I'm not so sure that the chimney will be approved at the next fire safety inspection if you remove the plaster. "The chimney shall be plastered in its entire length," they usually say. However, I have never found this wording in Boverket's documents, but the chimney sweeps tend to say that the plaster is part of the sealing construction and must not be removed. If you have a liner, though, an unplastered chimney might be fine.

But the part that will remain unplastered is not the chimney but a supporting wall for the chimney. The chimney itself will be plastered, and that will cover all the cement residues.

We did some light work with the angle grinder and removed almost everything. Turned out to be a very nice brick wall!
