In any case: we want to wallpaper the bedroom. Is it appropriate to wallpaper directly on plywood? Or could there be a more suitable material behind the board to wallpaper on? The plywood is very bumpy and uneven, right now it feels more worth it to take it down and install gypsum boards. What do you think?

Why are you tearing everything away?
You should use renovation plasterboard to level instead of tearing down the plyfa.
It was probably to provide a suitable surface for wallpapering that a renovation drywall was installed. So why did you take it down, because now you have to put up a new one instead......????
The plasterboard was installed very poorly. The wooden board is also poorly installed. We also wanted to see if there were bricks behind it, which there were on one wall; we are considering exposing it.
Make a small hole with a multi-cutter or something, so you can see what's behind without having to tear down the entire wall. If the boards are poorly attached, you can probably fix them better with the correct screws and possibly plugs. In this case, it looks like there are wooden planks behind, then you can screw up a new drywall sheet with regular drywall screws. It will hold.
