Currently building an exterior wall. The construction from outside to inside is as follows:
outer panel, air gap, exterior gypsum, 14cm insulation, particle board, and possibly a gypsum board on the inner wall.
Do you need a plastic film between the inner wall (particle board) and the insulation?
Can the wall be built without plastic film?

It is the internal moisture that is the problem... which you stop with foil... If you also have overpressure in the house, the moisture is even more easily pressed in...
I can imagine that old houses leaked like sieves and were kind of cold storage back then? No modern heating at that time...

In the older part of the building, there is a tritex board (I think that's what the slightly soft board is called) on the inside of the walls... I was thinking of just putting a chipboard there... but that's not recommended, right?... better to remove it... put plastic film there as well, and then chipboard...?..
Insulate with wood fiber wool to avoid the plastic, but you still need to use some kind of vapor barrier (check the manufacturer's website). If I build another house, I will definitely use wood fiber wool.
I have renovated an old mission house and of all the "old pros" I've asked, everyone (except, of course, the city planning office...) has said that you should never use plastic in old wooden houses. The explanation I got was that there is so much wood in the walls that it absorbs moisture, and plastic causes the wood to stop breathing, which can lead to problems down the line. Now, my walls have much more wood than yours seem to have, so this might not be a good solution for you.... I have used spray insulation, ThermoCell wood fiber wool, in the walls and ceiling.
