Hello. My first post but I often read here.

I live in a 1.5-story house from '45 with a basement that is 75% below ground. (Windows).

One of the corner rooms in the basement I have now excavated, lowered the floor a bit, and poured new with EPS and reinforced leveling compound, etc. The room is not particularly large, about 13-15 sqm. The idea is to create a cozy corner with a sofa, TV/projector, and some audio.
Of the room's four walls, only ONE wall is against the ground, but only about 40-50% where most of the material outside is gravel and large blasted stones. The rest of the walls are against other rooms in the basement.
The remaining walls are against the hallway, newly built garage, and boiler room. The garage is built onto one side of the basement and goes deeper than the house itself. So you enter the garage from the basement hallway. On the garage roof, I have a large terrace of about 75 sqm with access from the 1st floor.
The house was drained just a few years ago and I haven't noticed any moisture problems anymore.
There are 2 windows in this basement room, one facing the outdoor wall so you can see out and the other is directly against the garage wall (this window will be closed off).
Currently plastered with lime mortar which is partially knocked off. Three of the walls are hollow concrete block and one inner wall is a regular light brick wall made of some slag material.

The question is if I dare, for example, to frame up with 45mm steel studs and drywall (a simple solution) or if I need to plaster it again?
I do most of it myself so tips and tricks are welcome. Good to get sound acoustic advice too since this should be soundproofed a bit afterward. There will be carpet, curtains, etc.
