I'm going to polish my stove, install an insert, and redo the chimney.
Before I jump onto it, I want to see if I can get some tips here.

I was thinking of polishing away all the bricks and painting white. Can I polish directly on the overhang and get a straight line instead of the "steps"?

What plaster/mix do you recommend that can withstand movement and heat?

I'm going to remove the firebrick from the fireplace to make room for the insert, is there a different plaster used there?

Grateful for responses and tips.

I'm fairly sure that you should use murbruk C, at least near and above the insert where it gets the hottest. Don't use gipsputs there. I did, and it resulted in small cracks.
 
We polished our brick fireplace and it turned out really well with C mortar. To build out under the "overhang," use regular leca blocks which you cut to a suitable shape. It becomes very stable and subsequently works excellently for plastering.
