I'm working a bit in the garage and planning to install OSB and drywall instead of the current single drywall.

I was thinking of making it easy for myself by keeping the last piece of the existing drywall around a door and just adding drywall on top so it becomes double drywall there. Now, as I'm about to go shopping for some boards, I realize that OSB is 11 mm thick and the drywall is 12.5 mm. Where the OSB meets the drywall in the lower layer, there will be a few mm thickness difference that the outer drywall layer has to “handle.” Will this work, or will the drywall crack?

You mentioned that you want to make it easy on yourself. It's probably easier to replace all the panels.

Well... overall it's not that much more work, maybe 3-4 hours, but it doesn't become easier if it works to have a level difference of 2 mm on the lower layer.
 
Yes, it works. Just think a bit about where you place the screws.
