Shouldn't one have a vapor/diffusion barrier in the wet room because the waterproofing layers you will have act as one instead?
We are planning to have a tiled bathroom, and one wall is an exterior wall, so I shouldn’t have a vapor barrier there? Just drywall, waterproofing, then adhesive and tiles?
Then in the ceiling, can I keep the vapor barrier there? Planning to have a beadboard ceiling there.

No problem
We did build prefabricated houses and there the elements meant for wet rooms were clearly marked "Saknar fuktspärr". The thing about moisture barriers can be a bit tricky, as double barriers, without ventilation in between, can be very bad.
