We live in an old house where the interior walls are roughly plastered and not straight anywhere. The previous owner skipped the moldings completely. Any tips on what can be done?

Something simpler is to mount moldings and then apply latex sealant in the edge between the wall and the molding.
 
If you are talking about crown moldings, soft moldings made of foam are an excellent choice. They are available at most hardware stores in a variety of profiles. You attach them with adhesive (my favorite is Casco Set Extra). If you paint them with regular ceiling paint, few can tell that they are not wood. Trust me, I've tested it.
 
Agree with Andreas, cellplast ceiling moldings are very nice to work with when the walls are not perfect...

Thanks, now I know what we should use for the ceiling. As for the floor? Some gaps between the planks and the wall are quite large. Which isn't so fun in the winter when the mice like to come in for a visit, 5 mm is all a mouse needs to crawl in, as I've read :(

Quarter round moldings are relatively soft and are typically used where the floor does not align properly with the wall. It's often the case when, for example, a newly laid parquet floor doesn't quite "reach" the wall due to the requirement for movement allowance, but the quarter round can just as easily cover gaps up the wall. And then a little white, soft latex caulk on top. Although maybe not to stop the mice, but tell me a material that stops a rodent...
 
Alternatively, use unpainted moldings and fill gaps with filler, then paint.
