Planning to plaster an extension in Leca, and since the masonry, I've ended up with a whole bunch of mortar with mortar class M2.5 left over. Wondering if it can be used for the plastering. Does anyone know if as it is or with added cement or sand, it would work for slurry or surface plastering?

It works great to use as it is and as the sole plaster. It corresponds to a 3mm B-grade plaster. If you want to maximize the lifespan, you should first apply rödgrund and then use mesh. If you want to save money, just go ahead and plaster directly with what you have.
 
Awesome! Then I'll do slamming and netting on the outside, and apply a single layer on the inside...
 
Yes, that will be great. Apply the slurry one day and start netting and plastering the next day if possible. If the red base is left to set for too long, it can become difficult to plaster.
