I'm planning to build a trellis next to a staircase, from floor to ceiling, so that means it will have studs that are 2.4 meters. It needs to be robust since there's a drop height of 2.4m on one end and small children who shouldn't be able to harm themselves in any way.

It should probably be planed pine and the thicknesses I can find are 8, 15, 21, 27, 33.

What would you recommend? Will 21 suffice? Or is 33 even too weak? :)

Not great at this thing with strength.

I don't really think it fits in as we have all other carpentry in wood.

Where I used to live, there was a trellis as a stair guard, and the boards were about 100 mm wide and about 10 mm thick, placed with just under 100 mm distance. They were securely attached to the stringers except for the mounting in the joists (spanning multiple floors with a railing on top and not extending under the lowest staircase). I found them to be very secure, and as an adult, you often held onto the boards.

21mm will probably be just fine. It might flex a bit lower down the stairs where there is a long distance between the fastenings, but that can be solved with a simple handrail or a thin piece of wood that follows the slope of the stairs.

The staircase runs along a concrete wall down to the basement. So the railing will only be above the staircase on the entrance floor, so all the slats will have the same length (2.4m). Today there is a wall there that will be replaced with a railing to create a bit more space.
 
If you turn the batten so that the narrow side is facing the stairs, you can manage with small dimensions. For example, 21x45. You may need to connect the battens somewhere in the middle using spacers and a continuous metal rod. Planed pine is good and reasonably cheap.
