New here and only have a little building experience.
I have two walls at home that I would like to cover with plywood. One wall is concrete and the other is plaster. I would like to know how to put up the plywood? How is the load-bearing capacity? If I plug and screw the plywood according to best practices, can I then hang shelves without major concerns on the plywood without using Molly plugs? What do I need to consider? Should I frame between the existing wall and put up the plywood on that?

Hope you can help me so I can get started!

If it's a stud wall, you can basically just screw on a layer with whatever you desire.
Do you know the distance between the studs today?

If it's concrete or lightweight concrete, it might be a good idea to frame the wall externally with something like 28x70 or 45x70 depending on how much space is available. Then you screw the boards onto these studs. If you use 15 mm construction plywood, there are no issues with hanging items on these unless they are extremely heavy. In that case, you need to screw into the studs if it becomes heavier stuff than shelves, etc.
