I am going to frame up in the old garage to add some insulation and be able to hang things on the walls more easily. Since the floor is very uneven in some places and has a considerable slope from the road, I don't know how to attach a sole plate to nail the studs into. Does anyone have any good tips?

I had used metal studs for the entire framing, then plywood- gypsum!
 
It will probably have to be a metal track at the bottom and then wooden studs because of the price.
 
I would probably have made a mold and cast up to a smooth surface/shelf to attach/place the sill in/on.

Also placed a couple of rebar.
