Are there established tolerances for how much floor joists can deviate in their three dimensions?

That was nice. Now I'm wondering what is allowed when they are in place, for example as a base for chipboards with different center-to-center distances...

It is the surface floor itself that determines the tolerances, for example, parquet flooring, so you have to look at their requirements for evenness.
This is how Kährs says the subfloor should be...
