Hello,
I have a laminate countertop in the kitchen where the laminate has lifted from the chipboard in a small area. My question is if anyone has suggestions on what to glue it with, or any other tips for a solution.

Moisture is the root of the problem, but it is now dry and fine.

PL-400. If you glue two joints together with that adhesive, and then break them apart with a sledgehammer - at least it's not the glue joint that has given way.
 
Okay, does it work with plastic and trä as well?

I even think it works on glass. But definitely on plastic and wood. It is also available in small tubes - a bit overkill to buy a whole 400 g tube for your small project.
 
PL400 works for most things and is definitely what I would choose. Then there might be some "slippery" plastic types where even PL400 fails... If you have a scrap piece of the same (or similar) material, it never hurts to try before the "final" gluing.

Hahaha, yeah you don't get a second chance with PL-400!
