we are going to install an insert next to the existing chimney.

- We will need to build a foundation under the insert to get it at the right level.
What material is the most convenient? The insert weighs 100 kg, and we want to keep the total weight as low as possible.

- We will also need to put up a firewall between the closet and the insert. What material should we choose there?

Leca blocks don't weigh that much.... You can reinforce with metal pieces or mortar in some way under the stove if you think the weight will be significant / cm2. The wall material depends on how close the insert is to the wall, as well as the outer temperature of the insert (check the paperwork!). When I covered the raw plank wall behind a stove + vertical stovepipe, I used 10mm (if I recall correctly) masterboard, a spacer bracket ("hat profile" in metal), and then a wooden wall. Masterboard has the same properties as minerit.
To be really sure, you should contact the chimney sweep – he is the one who must approve the installation later.
