I am planning to buy a water-jacketed tunnel stove with glass on two sides. Now this insert needs to be built in somehow. I don't have a chimney as it's a new construction. I've tried to figure out which materials I can use and if there are any regulations that must be followed. I've searched in BBR etc., but haven't found anything specific.

What I understand so far is that since it is water-jacketed, I don't need air gaps around it, just some kind of insulation mat.

I've received suggestions ranging from regular gypsum boards with steel studs, minerit boards, and bricks. I want to keep the construction dimensions as small as possible, so a gypsum board of a few centimeters would be perfect. And what is classified as EI 60 material?

If anyone else has experience with similar projects, feel free to give tips and advice:)

Sounds like a fun project.
Talk to the sotarn. He knows how he wants it to approve the installation.
Additionally, you need to submit a building notification.
