I have done my first casting with EPS and it went quite well, but it turned out that it filled more than expected and also did not become as even as I had hoped. Now I need to remove some material so it becomes lower and more even. I would like suggestions on a suitable method. I have tried coarse sandpaper and it works, but too slowly because the plastic beads come in between and just roll back and forth.

Seems more like it didn't even go quite well, ;) considering you've got it both too high and uneven. Then it's just a matter of removing it mechanically, with a scraper, chisel, and hammer, or whatever works. You're going to sweat regardless! And you know that you can't have EPS as a finished surface layer?

Do you mean that it is not possible to lay, for example, laminate directly on, and if so, why?
 
Go in and read about this in the instructions from the manufacturer you have used. EPS is and has never been okay as a surface layer, primarily due to strength reasons, self-leveling compound or a slipcoat is what is normally applied on top. EPSCement AB | Applications
