I have just started tearing down the bathroom in my '75 mexitegelhus and became unsure about how to proceed.
The complication (at least in my head) is that the inner walls consist of single plasterboard - vertical boards (about 19mm) - horizontal boards cc600 (about 19 thick) - vertical boards - single plasterboard. The plan is to remove the plasterboard on the bathroom side and install new double plasterboard, then apply a waterproofing layer and tile. What do I do with the electrical boxes? Are there boxes that fit in double plasterboard? Or can the electrician mill down into the vertical boards to gain a few mm?

35mm, works but it clearly becomes cramped.. for example this one

No major issues with milling into the boards.
You mention double gypsum. Keep in mind that it should be moisture-resistant boards, not regular gypsum boards. IF the bathroom is to be constructed according to BKR regulations, there must be no regular gypsum in the wet zone.

The extra shallow junction boxes that are available do not accommodate all devices, so that can be an issue.
But switches are generally shallow, though it can still get cramped.
Cut out one or two layers of planks from the wall with the hole saw, is my tip.
It is probably less cumbersome than starting to fiddle with special shallow boxes.
Where are you planning to lay the conduit then? In the drywall layer? then this box fits well as it has the fittings close to the surface.

If the conduit goes deeper into the wall, it might be a good idea to use another old work box to avoid having to notch out so much extra around the round hole.

Could one remove the first layer of standing boards, run pipes, and place the boxes on the backside of the other standing boards (those belonging to the adjacent room) and then put back the standing boards, plaster, etc. This should then give 19+19+13+13+6= 70mm from the bottom of the box to the outside of the tile. Is that too much?

There can never be too much space in boxes... If you do so, you can use regular ones and skip wall boxes. There are adjustable ones that are probably suitable since it's difficult to determine how much the tiles add. If you later want to experiment with something like zwave and control lamps and fans automatically, deep boxes are great.
