I have a sawmill that cut facade timber for me - 175 x 25 spruce. I'm planning to replace the facade next summer and expected the sawmill to cut in early spring, not now in the fall. I received a message that the timber was ready for pickup this September...

Is it a problem to let the timber dry outside during the winter? Of course, properly stacked so that the wind can come through, with a metal sheet on top to protect against moisture.

Is there a risk of it cracking or anything when it gets too cold?

It is advantageous to dry during the winter when the humidity is lower. And the longer the wood lies, the more it dries. So congratulations on a quick delivery!
