I will have double boards on the wall, chipboard underneath screwed into the stud, plasterboard on top which should also be screwed, but do I have to screw the plasterboard into the stud as well, or can I just screw it into the chipboard?

The board shall be nailed to the stud and the plasterboard shall be screwed. The boards are 1200mm wide and the studs are set at CC60. You stagger the joints of the boards and the plasterboard. Never make so-called "general joints," where the joints in the two layers land in the same place.
In this way, you get good anchoring possibilities for both your board and your plasterboard.

Avoiding long joints will be incredibly easy...
For example, install the first chipboard whole (120 wide) and cut the first plasterboard (60). After that, it will solve itself.
However, I'm not so sure that it's always applied on construction sites... More than once, I've seen plasterboard screwed in wherever it fits if there is Plyfa/OSB underneath... It's not easy to feel if the screw grips either because in any case, it grips the Plyfa/OSB and with a screwdriver, it just clicks into place...
So, aim to set screws in the studs, but if you miss, it's not the end of the world...
