Guess the door is outside wet zone 1...
 
I've been thinking... I don't know exactly what wet zone 1 means, but it's silly. Install the door frame however you want. I don't think you intended to spray it with water. Smart to position the frame so it can be opened with consideration to the outermost layer = tiles. The main thing is that the door can be opened. Whether that means 2.5-5 mm shimming with either method doesn't matter.

Consider that my toilet is screwed without waterproofing onto a wooden floor. I don't care if some gasket doesn't meet a homebuyer's taste. It's ridiculous; if you think the door needs to be waterproofed, you've never done any building yourself. But that's just me and I could be wrong. But where are we heading if you have to ask where to install a bathroom frame down to the mm? Do it as it suits you, DON'T install the frame before the tiles so you know the conditions. It's much more important for the frame to be straight than watertight if I may give some advice.
